Cold brew coffee is made by steeping coarsely ground coffee beans in room-temperature water for 18-24 hours. You want to use a coarse grain to easily filter out the coffee grounds. Too thin of grounds and they will seep right through your strainer and can also result in a bitter coffee concentrate.
